Gnocchi

A great recipe to make with the kids – if a little messy!

500g waxy potatoes
200g plain flour
A little salt and black pepper

Peel and boil the potatoes until tender but not over cooked – drain and leave to cool
Mash the potatoes well ensuring it’s as smooth as possible. A potato ricer might be better for this purpose.
Sprinkle over the flour and pinch of salt and pepper and mix together with a spoon or your hands until a firm dough is formed.
Kneed the dough for a couple of minutes before rolling into sausages about 1cm thick. Then cut the sausages into pieces about 2cm long.
Gently cook the gnocchi in a pan of simmering water for a couple of minutes until they rise to the surface then drain well. serve with pesto, broccoli and cherry tomatoes or with the hidden veg tomato sauce (http://www.babymeals.net/recipes/nine-to-twelve-months/tomato-and-hidden-veg-sauce-with-pasta/
